These incredible muffins boast the rich flavors of chocolate and avocado while being packed with protein, thanks to Equip Chocolate Prime Protein. They're perfect for a healthy breakfast, a post-workout pick-me-up, or even a guilt-free dessert.
Ingredients needed (makes 10 muffins):
- 2 medium avocados (3/4 cup mashed) - 3 pasture-raised eggs - 1/4 cup pure maple syrup - 3 tbsp virgin coconut oil - melted - 2 scoops Equip Prime Protein Chocolate - 1 3/4 cups almond flour - 1/2 cup cacao powder - 1/4 cup arrowroot starch - 1 tbsp baking powder - 1/4 tsp salt - 1/3 cup extra-dark chocolate chips
Directions:
1. Preheat your oven to 350F and line a 12 tin muffin tray with 10 baking liners.
2. To a high speed blender or food processor, add the avocado, eggs, maple syrup, and coconut oil. Process until smooth and then transfer to a large bowl.
3. Add the remaining ingredients and mix to combine.
4. Transfer the batter into muffin liners and place in the oven.
5. Bake for 20-25 minutes or until just cooked through. Let cool for 15-20 minutes before removing.
