Back home in New Orleans, when the first nip of fall weather arrived, we'd collectively declare it gumbo season and onto the stove the big pots would go. In other parts of the country, that slight chill in the air may mean those pots are filled with soup. Or — with football underway — perhaps it feels like chili season to you. We've got recipes for all of these in our Recipe Finder, but if you've got chili on your mind, we shared two new versions this week. Both are courtesy of actor Brian Baumgartner's new "Seriously Good Chili Cookbook." Fans of the NBC hit sitcom "The Office" will recognize Baumgartner as the accountant Kevin, who famously spilled an entire vat of chili at Dunder Mifflin. Baumgartner shared his affection for that TV role, as well as tips for making his seriously good chili, which we dubbed The Office Chili. We also published a Chili Pasta Casserole that is so quick to make I featured it in Dinner in Minutes. This week, Ellie Krieger wrote about how the seasons affect her cooking. "I'm like a thermostat — as soon as the temperatures dip below 70 degrees, I turn my oven on and start roasting," she wrote before introducing her Roasted Pork Tenderloin With Apples, Shallots and Spinach. Aaron Hutcherson proved something I wasn't quite sure about: You can make a great veggie burger from canned produce. He whirred together thrifty Mushroom and Black Bean Burgers With Balsamic-Glazed Onions that we all dug into. And if living in a small household makes you shy away from baking, Becky Krystal explored tips for small-batch baking from two experts: Edd Kimber, author of "Small Batch Bakes," and Mike Johnson, who wrote "Simple Small-Batch Baking." She shared a recipe for Kimber's Single-Serving Chocolate Chip Cookie, too! This week, Aaron also offered suggestions for making the most of delicata squash as it moves into its peak season, with recipes for nachos, croquettes and a holiday-dinner-worthy sheet-pan supper.
